As a new mom I tried for a long time to find hobbies that I could enjoy with my children and find time for. Edible cake decorating is the perfect past-time. Not only is it fun to do with the kids, but I have birthdays every year that drive me to improve my skills.
The easiest way to start this hobby is to purchase some boxed cake mix, buy a basic cake decorating kit at the store, and browse the internet for ideas. The first cake I made was an Elmo cake for my daughter’s first birthday. I made a plain yellow cake and then using some information about edible cake decorating I found online, I made red, black and orange frosting with the Wilton’s gel food color. The cake was a big hit and delicious as well.
Since my first cake, I have tried more difficult cakes. This past year for my son’s first birthday party, I made a six car train cake complete with edible cargo (M&Ms and gummy bears). The kids loved the cake and I loved making it! I used a simple box chocolate cake and made six small loaf cakes. I then used canned frosting and added different color food dyes to make a variety of colors. I frosted the cakes with a crumb coat and let that harden in the refrigerator for a few hours. After that, I was able to frost again and top each “train car” with Kit-Kat side bars and candy cargo. I covered a piece of wood with wax paper, drew tracks with black icing and laid down the train. This session of edible cake decorating was my favorite as I was able to sample the left over cargo.
One of the best places to shop for decorations and supplies is the local craft store. In my area I go to A.C. Moore or Michaels and using a 40% coupon am able to pick up things like food dye, spatulas, frosting tips and candy toppers.
The best part about this hobby is I have more fun and get better at it with each cake I make. I’ve now made four cakes and each one trumps the one before it. I’m just hoping I can keep up at this pace! With a three year old and a one year old, I have many more years of edible cake decorating ahead!

A Delicious Moist Carrot Bundt Cake For All Occasions

MOIST CARROT BUNDT CAKE
1 1/3 cups granulated sugar
1/2 cup packed light brown sugar
1 cup unsweetened applesauce
1/2 cup canola oil
2 eggs
2 egg whites
2 tsp vanilla extract
2 1/2 cups all-purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda
2 cups shredded carrots
1 can (8-oz) unsweetened crushed pineapple, drained
1/2 cup golden raisins
1/2 cup finely chopped walnuts
FROSTING:
5 ounces reduced-fat cream cheese
1 pkg (3-oz) cream cheese, softened
1 tsp vanilla extract
2 cups confectioners’ sugar
1/4 cup finely chopped toasted walnuts
Preheat oven to 350 degrees.
In a large mixing bowl, beat the sugars, applesauce, oil, eggs, egg whites, and vanilla until well blended. In another bowl, combine the flour, baking powder, cinnamon, salt, and baking soda. After combined, beat into the sugar mixture until well blended. Stir in the carrots, pineapple, raisins, and walnuts. Coat a 10-inch Bundt pan with nonstick cooking spray and transfer batter into pan. Bake at 350 degrees for 45 to 55 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and cool for 10 minutes before removing from pan. Cool completely on a wire rack.
To make the frosting: In a large mixing bowl, beat cream cheeses and vanilla until fluffy. Beat in confectioners’ sugar until smooth. Frost the entire cake (this is not a drizzle-type frosting.) Sprinkle with the toasted walnut pieces. Store cake in refrigerator.
Yield: 16 servings

How to Make Delicious Apple Cakes From Pennsylvania and Kentucky

Being born and raised in Southern Indiana, I spent a lot of time in Kentucky and grew to love eating there. This Kentucky Apple Cake bakes in a 9 x 13-inch pan and is so tasty and moist it doesn’t need frosting. The Dutch Apple is a 9-inch square cake with a cooked apple topping. Both are these cakes are favorites here at my house in Texas!
KENTUCKY APPLE CAKE
1 cup vegetable oil
2 cups sugar
2 eggs
2 1/2 cups flour
2 tsp baking powder
1 tsp salt
1 tsp baking soda
1 tsp vanilla
3 large apples, sliced thick
1 cup chopped nuts
Mix the oil, sugar, and eggs together. Sift the flour, baking powder, salt, and baking soda together into the sugar mixture. Mix the two mixtures together well. Stir in the vanilla, apples, and nuts. Pour the mixture into a greased 9 x 13 x 2-inch baking pan. Bake at 350 degrees for 50 to 55 minutes. This cake does not need frosting.
PENNSYLVANIA COUNTRY DUTCH APPLE CAKE
1/3 cup warm milk
1/4 cup granulated sugar
1/4 tsp salt
1/4 cup butter, slightly softened
1/4 cup warm (not hot) water
1 pkg dry yeast
1 egg, beaten well
1 1/3 cups all-purpose flour
1 1/2 cup, cooked until slightly tender, apple slices; drained
2 tbsp brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
powdered sugar for garnish
Combine the warm milk with the granulated sugar, salt, and half of the butter; allow to cool to lukewarm.
Dissolve the yeast in the warm water. Stir the milk mixture, beaten egg and flour into the yeast mixture. Beat the batter until smooth. Spread the dough evenly into a greased 9-inch baking pan. Arrange the apple slices over the top. In a small bowl combine the brown sugar, cinnamon, and nutmeg; sprinkle over the apple slices. Dot the mixture with the remaining butter. Cover and allow to rise for 40 minutes in a warm spot. Bake at 400 degrees for 25 minutes.
Remove from oven and sprinkle with powdered sugar.

Delicious Vegan Chocolate Cake

The vegan diet, what a drastic diet, isn’t it? No animal products whatsoever permitted, including egg, milk, cream and butter also out of the menu. That leaves us with no much to make some appetising and tasty food and what about cakes or pastries.
Imagination is really needed in this situation and creativity is certainly not missing around us, judging from what those vegan addicts are able to produce from their kitchens.
With that in my mind and having had to deal a few times in the past with some very nice vegan customers, I came up with a real vegan recipe that I will share in this article.
It is a nice and moist vegan chocolate cake, that can be eaten on its own or with some sort of garnish like vegan chocolate or vegan vanilla sauce or even raspberry jam.
Here below are the ingredients needed for around 4 to 5 cakes of this delicious recipe:
Light whole-wheat plain flour: 220g
Plain cake flour: 225g
Sweet potato flour: 100g (to keep the cake moist)
Baking powder: 18g
Bicarbonate soda: 10g
Cocoa powder: 165g
Salt: 5g
Soya milk: 500g (rice or coconut or oat milk can also be used instead)
Corn oil: 260g
Rice malt syrup: 1000g
Apple cider vinegar: 7g
Vanilla essence: 10g
Method:
First turn the oven on, as always, with the temperature dial set to 180ºC (356ºF) this time.
Spray-grease around 4 or 5 cake tins then place a round piece of grease-proof paper on the bottom of each of them.
Then start by sifting the plain flour, potato flour, baking powder and bicarbonate soda together, then add the whole-meal plain four last without sifting it. Mix thoroughly.
In a saucepan heat the soya milk on low heat. When it is slightly bubbling, add the sifted cocoa powder and whisk well until it is dissolved. Remove from the heat.
Combine the other liquid ingredients in a bowl and mix well. Add the cocoa mixture and combine.
Add the wet ingredients to the dry ingredients.
Pour the mixture into the prepared cake moulds. Each cake mould should be filled to around 2/3 of their height.
Insert into the pre-heated oven and bake for around 40 minutes.
If your oven has a ventilation duct, keep it closed during the 1st half of the baking and then open it for the 2nd half.
When a small knife inserted in the chocolate sponge cake comes out clean, take them out of the oven and let them cool down for a few minutes.
When they have cooled down take them out of the tins and turn them over on cooling wire.
This cake can be eaten as it is or covered with a vegan chocolate icing, rendering it even more attractive and appetising.
