Chocoholics Delight! Hershey’s Cocoa Bundt Cake From Vintage Recipe Collection

Chocoholics, listen up!  Here is a great recipe for you.  This old Hershey’s recipe for Cocoa Bundt Cake is fantastic.  And it’s great for any occasion from birthdays to parties to pitch-ins, the list goes on and on.  And here’s a holiday hint.  For Christmas, crush a candy cane and sprinkle over the top of the glaze to give the cake a pepperminty, holiday taste and look.

HERSHEY’S COCOA BUNDT CAKE

This recipe was in an old Hershey’s recipe give-away.

1 2/3 cups all-purpose flour
1 1/2 cups sugar
1/2 cup Hershey’s cocoa
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 eggs
1/2 cup shortening
1 1/2 cups buttermilk or sour milk*
1 tsp vanilla extract
Chocolate Glaze (recipe below)

Heat oven to 350 degrees. Generously grease and flour a 12-cup Bundt pan. In the large mixer bowl, blend flour, sugar, dodoa, baking soda, baking powder, and salt; add remaining ingredients except chocolate glaze. Beat on low speed for 1 minute, scraping bowl constantly. Beat on high speed for 3 minutes, scraping bowl occasionally. Pour batter into prepared Bundt pan. Bake for 50 to 55 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pan and place on a wire rack to cool completely. Drizzle with the chocolate glaze.

Yield: 12 to 16 servings

*If you don’t have buttermilk, you can use 1 1/2 tablespoons vinegar plus milk to equal 1 1/2 cups. Allow to sit for a couple of minutes before using.

Chocolate Glaze:

1/4 cup sugar
1/4 cup water
1 cup Hershey’s Semi-Sweet Chocolate Chips or Mini-Chips

In a small saucepan, bring water and sugar to a rolling boil, stirring until the sugar is dissolved. Remove pan from heat. Immediately add the chocolate chips. Stir mixture with a wire whisk until the chips are melted and the mixture is smooth. Cool until slightly thickened. Drizzle over top of cake.

Note: For a pretty presentation, add a few chopped pecans around the top of the cake over the glaze.

Ingredients

2 Squares (1 oz. each) semisweet chocolate, chopped coarsely

1 Square (1 oz) unsweetened chocolate, chopped coarsely

3 Tbs. Brandy, dark rum or strong coffee

2 Eggs

1/3 c. Sugar

1/8 Tsp. Salt

2/3 c. Heavy cream

Directions

A light mousse; the blender method (recipe follows) makes a darker, denser mousse. As with many other dessert recipes, whipped cream works well for garnish (optional). In small heavy saucepan over low heat, melt chocolates with the brandy. Stir until smooth; set aside. In a small bowl, beat eggs, sugar and salt until fluffy. Add cream; beat until mixture mounds slightly. Beat in chocolate mixture until well blended. Spoon into serving bowl, 4 glasses or dessert dishes. Chill. Garnish with whipped cream. Blender method: In blender whirl eggs, sugar and salt 45 seconds or until frothy. Add cream; blend 10 seconds. Add chocolate mixture; blend until smooth. Proceed as above.

LARGE CHOCOLATE CHIP COOKIE

Ingredients

1 Box yellow cake mix

1/2 c. Oil

2 Tbs. Water

2 Eggs, beaten

1 c. Chocolate chips

Directions

Combine ingredients and stir until moistened. Place on a lightly greased pizza pan. Bake 350 degree for 20 to 25 minutes or until brown.

EASY CHOCOLATE CAKE

Ingredients

2 2/3 cup flour

2 Tsp. baking soda

2/3 cup cocoa powder

2 cup white sugar

1 Tsp. salt

2 cup water

2 Tsp. vanilla

2/3 cup vegetable oil

2 Tsp. white vinegar

Directions for chocolate recipe: Sift dry ingredients into a bowl. Add liquid. Mix well. Transfer to 13x9x2 inch pan. Bake at 350F for 35 minutes.

There are 2 types of cakes made without powder and soda, a sponge and a foam, here’s one:

Vanilla Angel Food Cake

Ingredients

1 1/2 c sugar
1 c sifted cake flour
1/2 ts salt
1 1/2 c egg whites; (about 11 large)
2 ts warm water
1 ts cream of tartar
2 ts vanilla extract
1 powdered sugar
1 crystallized ginger; (optional), thinly sliced

Instructions

Preheat oven to 350oF. Sift 1/2 cup sugar, flour and salt into medium bowl 5 times. Using electric mixer, beat egg whites in large (at least 4-quart) bowl until foamy. Add 2 teaspoons warm water and cream of tartar and beat until soft peaks form. Gradually add remaining 1 cup sugar and vanilla and beat until stiff but not dry. Sift sugar-flour mixture over whites 1/4 cup at a time and gently fold in.

Transfer batter to ungreased 12-cup angel food cake pan with removable bottom (do not use nonstick pan).

Bake until cake is light golden, top springs back when touched lightly and cake begins to pull away from sides of pan, about 45 minutes. Remove cake from oven. Turn cake upside down; place center tube of pan over narrow bottle neck or funnel. Cool cake completely.

Using knife, cut around sides and center tube of pan to loosen cake. Push up cake. Cut cake from bottom of pan. Transfer to platter. (Can be made 1 day ahead. Wrap tightly with plastic wrap and store at room temperature.) dust cake with powdered sugar. Garnish with crystallized ginger, if desired.

Dark Chocolate Frosting Recipe

Preparation time:    15 minutes

Ingredients:

3 cups of refined icing sugar
6 tablespoons of coco powder
6 tablespoons of softened butter
6 tablespoons of Ideal Milk or fresh cream
1 teaspoon of vanilla essence
1/2 slab of dark chocolate

Method:

Use a double boiler and melt the ½ slab of dark

chocolate
Sift the icing sugar and coco powder
Mix the butter, icing sugar and coco powder

together in a mixing bowl until it has a creamy

texture
Add the vanilla essence
Take the melted chocolate and fold into the

butter, icing sugar and coco powder mixture
Last of all add the Ideal Milk or cream and fold

it into the mixture
The frosting must have a soft spreading texture

You are now reading ice your rich moist chocolate

cake. Crush some nuts up such as pecans and mix

with some apricot jam and spread onto one of the

halves of the cake then spread a layer of

frosting and put the other half on top Continue

to ice the whole cake and when completed sprinkle

some chopped nuts on top of the cake and add some

cherries.

share with others which was his great, great

Grandmothers recipe. In those times the butter

and cream were made on this farm. You will use

this recipe time and again as it is really

delicious and make a chocolate cake really

special.

Last fall I made this cake and it was wonderful. I have lost my recipe and would like to find it again. You make the cake and bake it for several minutes. You make a caramel sauce on the stove top then pour it over the half baked cake and return it to the oven to finish baking. It really is good. If anyone can help me I would greatly appreciate it.

Moist Apple Dessert Cake With Caramel Icing Recipe

During the fall when apples are in season here on the east coast, I enjoy baking a variety of recipes that use fresh picked apples from our local orchard. This particular recipe was given to me years ago by my grandmother, who was a fabulous baker for many years.

When it comes to making an apple dessert cake, this is my favorite recipe to use. You will want to dice down your peeled apples to about 1 to 1 1/2″ in size, so that the cake bakes evenly.

Ingredients:

2 cups granulated sugar
1 1/2 cups vegetable oil
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
3 cups peeled and diced apples
1 cup shredded coconut
1 cup pecans, chopped

Preheat oven to 350 degrees.

In a large bowl, cream together the sugar, vegetable oil and eggs until creamy and smooth. Slowly add in the all-purpose flour, baking soda, salt and vanilla extract. Mix until all ingredients are well combined. Fold in the diced apples, coconut and chopped pecans.

Note: This batter will be very stiff, if necessary, stir by hand.

Lightly spray a 9 x 13″ baking dish with nonstick cooking spray. Pour the cake batter into the pan. Place pan in a 350 degree oven and bake for 35 to 45 minutes or until the center is done. Remove cake to cool on a wire rack.

Caramel Icing Ingredients:

1 stick of butter, softened
1/4 cup milk
1 cup brown sugar, firmly packed

In a medium-sized saucepan, combine the butter, milk and brown sugar. Bring mixture to a full boil and boil for 3 minutes, stirring constantly to prevent scorching. Remove from heat and place mixture into a mixing bowl. Using an electric mixer, beat until its creamy and smooth. Spread icing across the top of your cooled cake.

Betty’s Chocolate Lava Cake Recipe

In this video, Betty demonstrates how to make a version of “Chocolate Lava Cake.” This is the dessert that I ordered during our recent dinner at the Rivue Restaurant at the Galt House in Louisville, Kentucky. Here, I just used mixes for the cake and for the pudding, in order to show you a method of getting pudding baked inside a cake. You may want to use homemade chocolate pudding and a homemade chocolate cake batter to give it your own flair. Ingredients: 1 chocolate pudding and pie filling mix (along with milk, as directed by the mix instructions) 1 chocolate cake mix (along with eggs, oil, and water, as directed by the mix instructions) 1 muffin tin with 6 small cups, 2 ½-inches across the top 1 muffin tin with 6 large cups, 3 ½-inches across the top cooking oil spray vanilla ice cream Prepare the chocolate pudding mix, according to package instructions. Let cool a bit, then spoon pudding into 6 small muffin cups (sprayed with cooking oil spray), until muffin cups are about one-third to one-half full. Refrigerate until well set. (Note: It is better to put them in the freezer and get them just to the point where they contain ice crystals.) Meanwhile, prepare chocolate cake batter. When the pudding is almost to the freezing point, remove the 6 circles of pudding from the muffin pan, and set them nearby. Spoon cake batter into 6 large muffin cups (sprayed with cooking oil spray), until the muffin cups have ¾-inch to 1-inch of cake batter in the bottom of the cups. Place a
