Ingredients

1/4 c. Butter or margarine, softened

1 1/2 c. Sugar

1/4 Tsp. Salt

1 Tbs. Vanilla

3/4 c. Unsweetened cocoa

3 1/2 c. Unsifted cake flour

2 Tsp. Baking soda

2 1/2 c. Water

4 Egg whites, at room temp.

Cocoa frosting

Chocolate glaze

Confectioners’ sugar and -unsweetened cocoa (opt. for checkerboard decoration)

Directions

1. Heat oven to 350′F. Generously grease and flour three 9-inch round

cake pans.

2. In a large bowl with electric beater or mixer, beat butter, 3/4 C

sugar, salt, and vanilla together until fluffy.

3. Combine cocoa, flour, and soda in a sifter. Sift into bowl on top

of butter mixture. Add water and beat at low speed just until smooth.

4. With clean beaters in a medium bowl, beat egg whites until fluffy.

Gradually add remaining 3/4 C sugar. Continue beating until stiff peaks form. Fold, one-third at a time, into chocolate batter.

5. Divide batter evenly into prepared pans. Bake until centers spring

back when touched-20 to 25 minutes.

6. Cool 5 minutes in pans. Turn out on cooling rack and cool

completely.

7. Prepare cocoa frosting. Fill and assemble cake. Spread a thin

smooth layer of frosting over cake. Refrigerate 1 hour.

8. Prepare chocolate glaze. Place chilled cake on a cooling rack with

a tray underneath it. Spoon glaze onto top of cake. Spread evenly allowing glaze to flow down sides. Smooth sides.

9. Place cake, still on cooling rack with tray, in refrigerator until

glaze is firm.

10. Decorate top with cocoa and confectioners’ sugar checkerboard just

before serving, if desired. Place 1-inch strips of thin cardboard gently onto frosting 1-inch apart. Sift unsweetened cocoa over top of cake to solidly fill spaces. Carefully remove and clean strips. Place gently in opposite direction. Sift confectioners’ sugar over cake. Remove strips.

Cocoa Frosting: In a medium bowl, beat together 1/3 C softened butter or margarine, 1 1/2 lb. confectioners’ sugar, 1/3 C unsweetened cocoa, 1 Tsp. ground cinnamon, 3/4 Tsp. vanilla and 1/3 to 1/2 C milk. Use to fill and frost cake.

Chocolate Glaze: In the top of a double boiler, over hot (not boiling) water, melt 6 1-oz squares semisweet chocolate and 4 Tbs. butter. CRANBERRY AND WHITE CHOCOLATE CHEESECAKE

Ingredients

CAKE 4 oz. White chocolate, chopped

2 pkg. 8-oz cream cheese

3/4 c. Sugar

3 Eggs

2 Tsp. Vanilla

pinch Salt

3 c. Sour cream

CRUST: 1 c. Graham cracker crumbs

2 Tbs. Butter, melted

2 oz. White chocolate, chopped

GLAZE: 2 c. Cranberries

1/3 c. Sugar

1 Tsp. Cornstarch

Grated white chocolate for Garnish if desired

Directions

Recipe for Crust: Stir crumbs with butter until well moistened; stir in chocolate. Press into the bottom of a greased 9-inch spring form pan. Centre pan on a 20 X 14 inch piece of foil; press up tightly around side of pan. Bake in 325F oven for 8 minutes. Let cool on a rack.

Recipe for Cake: In a double boiler melt chocolate. Let cool. In a large bowl, beat cream cheese until softened. Gradually beat in sugar; beat for 3 minutes or until fluffy. On low speed, beat in eggs, one at a time, beating well after each addition. Stir in vanilla, chocolate and salt; stir in sour cream. Pour onto crust. Set cake pan onto a larger shallow pan; pour in enough hot water to come 1, inch up the side. Bake at 325F for 1 1/4 hours or until the edge is set but centre still jiggles slightly. Turn oven off; let cool in oven for 1 hour. Remove from larger pan and remove foil; let cool on a rack. Cover and refrigerate over night.

Recipe for Glaze: In saucepan cook cranberries and 1/4 cup water, partially covered, just until boiling. Stir in sugar and return to a boil; cook for 2 minutes or until sugar is dissolved but berries have not popped. Drain, reserving juice and berries separately. Remove cake from pan; place on cake plate. Return juice to saucepan; blend in cornstarch. Cook, whisking, until boiling and thickened; let cool slightly. Spoon berries around edge of the cake. Spoon glaze over top. Refrigerate for 1 hour or until set. Garnish with chocolate gratings. Canadian Living, December 1993.

Cupcake Recipes: How to Bake Your Vanilla Cupcake

Vanilla is one flavor that one can just feast on. Other than the overrated chocolate filling that has become too conventional in these modern times, vanilla becomes the latest in trend when it comes to baking cupcakes. For ingredients, you will need to prepare 200g butter, softened, 1 and 3/4 cups (370g) caster sugar, 2 tsp vanilla bean paste, 4 eggs, 2 and 3/4 cups (405g) self-raising flour, and 1 cup (250ml) milk. With these ingredients, you will be able to make 24 pieces of vanilla cupcakes. Now for its butter frosting, you will need to prepare 200g of butter, softened, 6 cups (900g) icing sugar mixture and 1/2 cup (125ml) milk.

To begin baking, the first step that you need to do is to preheat oven to 180°C. Line 24 1/3 cup (80ml) muffin pans with patty cases. While doing this, you can cream the butter, sugar and vanilla bean paste with an electric mixer. You can then add the eggs one at a time. Beat these eggs until they are justly combined. After making sure that the eggs have been justly beaten, you can then add the flour and milk in alternate batches. For stirring these flour and milk, you can use a wooden spoon in order to combine it evenly.

After doing the above steps, this is when the main baking begins. Start baking for 15-20 minutes or until cooked through. After 20 minutes the most, only then that you can remove the baked cupcakes from the oven and transfer them to a wire rack in order to cool completely.

You can then start doing the frosting. You can use an electric mixer to make sure that the butter will be beat evenly until it becomes very pale in color. While beating, you can add the sugar from gradually to make sure to perfect the mixture. After the sugar has all been added and being beaten evenly with the butter, you can then add the milk and beat it along with the butter and sugar. You can choose to divide the frosting into small bowls and you can add colors unto it using a small palette knife to spread the icing. You can choose to add variant colors or a theme to your icing to make your cupcakes look very pretty. Depending on the occasion, you can also add up some decorations unto these cupcakes. Butterfly decors or frosting always makes good when designing for a baptism or a kid’s birthday while you can try making up a spider web on each cupcakes for Halloween. In fact, you can make a delightful wedding cake out of these cupcakes.

 –Cracker Barrel Chicken & Dumplings–

> Chicken and Broth:

3 quarts water

1 3-4 pound chicken cut up

1 1/2 teaspoons salt

1 small onion sliced

2 stalks celery, chopped

1 clove garlic, peeled and quartered

1 bay leaf

4-6 whole parsley leaves

1 teaspoon coarsely ground black pepper

1 tablespoon lemon juice

 

> Dumplings:

 2 cups all purpose flour

1 tablespoon baking powder

1 1/4 teaspoons of salt

1 cup plus 2 tablespoons milk

1. Bring the water to a boil in a large pot. Add the chicken, 1 teaspoon of salt, onion, celery, garlic, bay leaf, and parsley to the pot. Reduce the heat to simmer and cook the chicken, uncovered, for 2 hours. The liquid will reduce by about one third.

2. When the chicken has cooked, remove it from the pot and set it aside. Strain the stock to remove all the vegetables and floating scum. You only want the stock and the chicken, so toss everything else out.

3. Pour 1 1/2 quarts (6 cups) of the stock back into the pot (keep the leftover stock, if any, for another recipe-it can be frozen). You may also want to use a smaller pot or a large saucepan for this. Add coarsely ground pepper, the remaining 1/2 teaspoon of salt, and the lemon juice, then reheat the stock over medium heat while preparing the dumplings.

 

4. For dumplings, combine the flour, baking powder, 1 1/4 teaspoons salt, and milk in a medium bowl. Stir well until smooth, then let the dough rest for 5-10 minutes. Roll the dough out onto a floured surface to about a 1/2 inch thickness.

5. Cut the dough into 1/2 inch squares and drop each square into the simmering stock. Use all of the dough. The dumplings will first swell and then slowly shrink as they partially dissolve to thicken the stock into a white gravy. Simmer for 20-30 minutes until thick. Stir often.

6. While the stock is thickening, the chicken will have become cool enough to handle. Tear all the meat from the bones and remove the skin. Cut the chicken meat into bite-size or a little bigger than bite-size pieces and drop them into the pot. Discard the skin and bones. Continue to simmer the chicken and dumplings for another 5-10 minutes, but don’t stir too vigorously or the chicken will shred and fall apart. You want big chunks of chicken in the end.

7. When the gravy has reached the desired consistency, ladle four portions onto plates and serve hot. Serve with your choice of steamed vegetables, if desired.

 

–Cracker Barrel Country Cornbread Dressing–

2/3 cup chopped onion

2 cups chopped celery

2 quarts of day old, grated cornbread

1 quart of day old, grated biscuits

1/4 cup dried parsley flakes

2 tsp poultry seasoning

2 tsp ground sage

1 tsp coarse ground pepper

4 ounces margarine

1 quart (32 ounces) plus 1 (14 ounce) can chicken broth

Preheat oven to 400 degrees F.

Mix onion, celery, grated cornbread, and biscuits, parsley, poultry seasoning, sage, and pepper in a large mixing bowl. Add melted margarine to mixture. Stir until well blended.

Add chicken broth to dry ingredients and mix well. The dressing should have a wet but not soupy consistency like a quick bread batter (banana bread or cornbread).

Divide mixture evenly into two (8 x 8 inch) pans sprayed with non-stick spray.

Bake uncovered for 1 hour until lightly brown on the top.

 

–Cracker Barrel Buttermilk Biscuits–

8 servings…

2 c Bisquick

2/3 c Real buttermilk

1. Work together Bisquick and buttermilk to smooth dough. Dip hand in just enough Bisquick to kneed dough in bowl until smooth and elastic.

2. Shape dough into 16 thin patties, placing 1 atop another forming 8 biscuits in greased 9? round baking pan. Bake at 450 16 to 18 minutes or until golden. Wipe tops at once in butter. They split easily because of the way you formed them with the 2 pieces.

3. To make BONANZA Copycats, add 4 ts sugar. Shape into 6 patties, 1? thick, 3? round. Place close together in greased round baking pan. Wipe tops in soft butter. Bake 450 18 minutes or until brown.

4. Cool 10 minutes before serving. Split with thumbs instead of cutting with knife. These do not keep well. Right out of oven wipe tops again with dabs more butter to keep surface soft and tender.

 

–Cracker Barrel Double Chocolate Fudge Coca-Cola Cake–

 4 servings…

2 cups all-purpose flour

2 cups granulated sugar

3 tablespoons cocoa

1 cup butter or margarine

1/2 cup buttermilk

1 cup Coca-Cola

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

Pinch of salt

1 1/2 cups miniature marshmallows

Preheat oven to 350 degrees F. Grease and flour a 13 x 9-inch baking pan.

Combine dry ingredients in a bowl.

Heat butter, cocoa and Coca-Cola to boil and pour over the flour mixture. Mix well. Add eggs, buttermilk, vanilla extract and marshmallows and blend. The batter will be thin with marshmallows floating on top. Bake for 45 minutes.

> Frosting:

1/2 cup butter or margarine

3 tablespoons cocoa

Boil first three ingredients. Remove from the heat and blend in the sugar and vanilla extract. Spread on warm cake.

On a wax or freezer paper lined sheet pan, arrange the mixture into little haystacks and refrigerate, then serve.

This cake is made just like brownies, except on a larger scale. Just bake up some brownies, throwing in any nuts you wish. Let kids select the miniature chocolate bars and simply melt them down in a microwave. Drizzle over your brownie cake, and top with bits of remaining miniature chocolate bars. This recipe also works on a smaller scale, which is great for parties as each child can create their own custom cake using mini chocolate bars of their choice

5. Sweet Desert Pizza!
For a sweet but healthy children’s cake try Dessert Pizza. This recipe calls for sugar cookie dough crust, fresh fruits, and softened cream cheese. Bake up your cookie dough in a circular pizza pan. Mix up the cream cheese with some confectioner’s sugar, and then spread the mixture onto your “pizza pie.” Kids have a blast decorating this cake like a real pizza. Select fresh fruits like pineapples, oranges, peach slices, blueberries, raspberries, and strawberry halves. Slice the cake into wedges and serve.

Healthy Pumpkin Recipes

After you’ve learn all about pumpkin benefits, we would like to share a few delicious and easy recipes for a variety of Pumpkin-based dishes.

Thai Pumpkin Curry with Citrus Notes (Vegan/Gluten-Free)

This vegetarian curry offers an array of bright colors – orange, yellow, and red – infused with citrus accents. You’ll love the delicious taste of this curry, as well as its healthy combination of vegetables, including pumpkin or squash, yam/sweet potato, carrots, yellow bell pepper, and cherry tomatoes. Makes a perfect vegetarian Thanksgiving recipe, but is equally yummy any time of the year. ENJOY!

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

* 1/2 small pumpkin (or subsitute 1 acorn squash, butternut, or any other orange squash except spaghetti)

* 1 small or 1/2 large yam or sweet potato, peeled and cubed

* 1-2 medium carrots, cut into thick slices

* 1 yellow bell pepper, cut into bite-size pieces

* 1 cup cherry tomatoes

* 1/2 can chick peas, drained

* 2 Tbsp. grated orange rind

CURRY SAUCE:

* 3-4 cloves garlic

* 1-2 fresh red chillies (or substitute fresh green chilies, OR 1-2 tsp Thai chili sauce)

* 1 can coconut milk

* 1 tsp. tamarind paste (or substitute 1 Tbsp. lime juice)

* 2+1/2 Tbsp. soy sauce (use wheat-free soy sauce for gluten-free diets)

* 1 Tbsp. brown sugar

* juice of 1/2 lime

* juice of 1 medium orange

* 1/2 tsp. turmeric

* 1 Tbsp. rice vinegar (or substitute apple cider vinegar)

* 1 Tbsp. ground coriander seeds, 1 Tbsp. ground cumin, and 1 tsp. fennel seed

* 1/3 purple onion, sliced

* GARNISH:

* handful of fresh basil leaves

* optional: 1 Tbsp. roasted pumpkin seeds and a few nasturium flowers (or other edible flowers)

Preparation:

1. To make the curry sauce, place all sauce ingredients together in a food processor (or blender if you don’t have a processor). Process well. Set aside.

2. Prepare pumpkin or squash by cutting it open and scooping out the seeds with a spoon. Either save the seeds for roasting, or discard. Cut the pumpkin/squash into cubes, slicing off the skin. You will probably only use 1/3 to 1/2 a pumpkin for this recipe (save the rest in the refrigerator for cooking later).

3. Prepare the rest of the vegetables plus the orange rind.

4. Place the pumpkin (or squash), yam, and carrots in the wok/frying pan together with the curry sauce over medium-high heat. Stir well.

5. When the curry begins to boil, reduce heat to medium, stirring occasionally. Allow to simmer for 6-8 minutes, or until vegetables have softened.

6. Add the bell pepper, cherry tomatoes, chick peas, and orange rind, stirring to incorporate. Simmer for 2 more minutes.

7. Do a taste test for salt and spice. If not salty enough, add a little more soy sauce. If not spicy enough for your taste, add more fresh chilli (or chili sauce). If too sour, add a little more sugar.

8. To serve, scoop into a large serving bowl, or portion out on individual plates. Sprinkle with fresh basil leaves and pumpkin seeds, then top with several nasturium flowers (if using). Serve with plenty of Thai jasmine rice (white or brown), and enjoy this colorful and fragrant Thai dish!

Not Your Grandma’s Pumpkin Pie (RAW)

Crust:

2 C almonds

1/2 C dates, pitted and soaked

1/4 tsp cinnamon

Pulse the almonds in a food processor until evenly ground. Do not over-process or you’ll end up with almond butter. Add dates and process into a dough-like consistency. Press the mixture into an 8-inch ceramic pie plate that has been greased with coconut butter. Place in the freezer to set while preparing the filling.

Filling:

2 C pumpkin, cubed

meat of 1 young coconut (reserve water)

1/2 C walnuts, soaked

1/2 C almonds, soaked

1/2 C dates, soaked

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp ginger

1/2 tsp ground cloves

Begin mixing pumpkin and coconut water in a food processor until you have a smooth paste. Add in coconut meat, walnuts and almonds, blending again until smooth. Add dates and spices, and process some more.

Pour mixture on top of almond pie crust and spread evenly. Chill for several hours before serving.

Pumpkin Oatmeal Cookies (Vegan)

prep time: 15 minutes | cooking time: 32 minutes | makes 4 dozen cookies

These are soft out of the oven, but as they cool they are nice and chewy. They are a serious crowd pleaser, for crowds with taste buds.

Ingredients

2 cups flour

1 1/3 cups rolled oats

1 teaspoon baking soda

3/4 teaspoon salt

1 tsp cinnamon

1/2 teaspoon nutmeg

1 2/3 cups sugar

2/3 cup canola oil

2 tablespoons molasses

1 cooked pureed pumpkin

1 teaspoon vanilla

optional: 1 tablespoon ground flax seeds

1 cup walnuts, finely chopped

1/2 cup raisins or chocolate chips

Directions

Preheat oven to 350. Have ready 2 greased baking sheets.

Mix together flour, oats, baking soda, salt and spices.

In a separate bowl, mix together sugar, oil, molasses, pumpkin and vanilla (and flax seeds if using) until very well combined. Add dry ingredients to wet in 3 batches, folding to combine. Fold in walnuts and raisins (or chocolate chips)

Drop by tablespoons onto greased cookie sheets. They don’t spread very much so they can be placed only an inch apart. Flatten the tops of the cookies with a fork or with your fingers, to press into cookie shape. Bake for 16 minutes at 350. If you are using two sheets of cookies on 2 levels of your oven, rotate the sheets halfway through for even baking. You’ll have enough batter for 4 trays.

Remove from oven and get cookies onto a wire rack to cool. These taste best when they’ve had some time to cool and set. They taste even better the next day!

Delicious Pumpkin Recipes If not spicy enough for your taste, add more fresh chilli (or chili sauce). squash into cubes, slicing off the skin.
